Baking Chocolate Orange Muffins via Zoom: A Virtual Delight

On Tuesday 29th of October the group was joined by Beccy and Kirsty on zoom from http://zurich community foundation to bake 12 beautiful chocolate orange muffins. With aprons on and ingrediencies ready the bakers were excited to go. The participants followed the instructions while watching what the ladies were doing. The group enjoyed connecting with other members in their virtual baking, it was such fun. Members joined from their kitchens to whip up delicious chocolate orange muffins. On the day of our baking session, everyone logged into Zoom, eager to share their kitchen antics. We set up laptops and iPads on kitchen counters, ensuring we could see the mixing bowls and enthusiastic faces. With everyone in attendance, we kicked things off with a little chit-chat, sharing our excitement and memories related to baking. Slowly, we combined the dry and wet ingredients, stirring until just blended. The best part? Each of us added chocolateorange chuncks to our batter, leading to friendly debates about how many were too many. Spoiler alert: there’s no such thing as “too many” chocolate orange segments!
Once the timer dinged, we pulled out our muffins, golden and perfectly risen. The delightful combination of chocolate and orange filled our homes with a warm, inviting scent. Baking chocolate orange muffins via Zoom was not only about creating a tasty treat but about connecting, laughing, and sharing an experience with our friends. All you need is a recipe, some ingredients, and a little creativity. Happy baking!
Muffin Ingredients
115 g unsalted butter
250 g light brown soft sugar/caster sugar
2 medium eggs
225 g self raising flour
25 g cocoa powder
Pinch of salt
125 ml whole milk
1 tsp orange extract (or zest of 1 large orange)
300 g chocolate orange chocolate (chopped)
Topping
100 g chocolate (melted)
12 chocolate orange segments
Instructions
Preheat your oven to 190ºC/170ºC fan and get your 12 muffin cases ready
Beat the unsalted butter with the sugar until light and fluffy.
Add each egg, beating well each time.
Add the self raising flour, cocoa powder and salt to the mixture, and beat again.
Finally, pour in the milk and orange extract beat again. Try not to over beat the mixture!
Fold through the chunks of chocolate, and split evenly between the cases.
Bake in the oven for about 25 minutes until they are baked through and springy to touch.
Leave to cool fully.
Decoration
Melt the chocolate, and spoon a little onto the top of each muffin
Press a chocolate orange segment onto the top, and leave to set.
